Pork Chops Mexicana
Healthy Recipe

Ingredients:
4 boneless lean pork chops (1 pound), 1/2-inch thick
1-1 /4 cup salsa
1 /2 cup finely chopped cocktail peanuts
1 teaspoon unsweetened cocoa
1 /8 teaspoon ground cinnamon
1 /4 cup chopped cilantro or green onions

Directions:
Cook chops in large nonstick skillet sprayed with cooking spray on medium-high heat two to three minutes on each side or until browned on both sides.

Combine salsa, peanuts, cocoa and cinnamon; spoon over chops.

Reduce heat to medium-low; simmer five minutes or until chops are no longer pink in the center and sauce is thickened, turning chops over and stirring sauce after three minutes. Sprinkle with cilantro.

Recipe makes four servings.
