Pasta Primavera Recipe
Just plain healthy recipe...
A delicious recipe for stir-fried chicken and fresh vegetables cooked in a little olive oil with garlic, lemon juice, and a few spices... tossed with Linguine and a bit of parmesan cheese! Pasta Primavera is a well rounded main dish.
1-1/2 teaspoon olive oil
1/2 clove garlic
1 tablespoon lemon juice
1 teaspoon basil
1 teaspoon oregano
1-1/2 ounce linguine
3-1/2 ounces boneless, skinless chicken breast
1-1/2 teaspoon Parmesan cheese
1 cup fresh vegetables of choice
Prepare linguine according to directions, omitting fat and salt. Mince garlic, cut chicken into bite sized pieces and chop vegetables.
In non stick skillet heat half the oil and add chicken. Stir fry until slightly golden/remove from skillet and leave juices.
Add remaining oil to skillet and saute vegetable for two minutes. Reduce heat, add lemon juice and spices. Cover and simmer for 4 minutes until vegetables are tender.
Return chicken and heat through. Toss with linguine and parmesan.
