Un-Fried Chicken Fried Rice Recipe

Un-Fried Chicken Fried Rice. Recreate this Chinese favorite in one pot and with a lot less fat and calories in only 20 minutes.

Recipe Ingredients

1 tablespoon vegetable oil
1 pound boneless skinless chicken breast cut into bite-size pieces
1 can chicken broth
4 teaspoons light soys sauce
3 cups frozen stir-fry vegetables
2 cups Minute White Rice, uncooked


Stir Fry Vegetables for Un-Fried Chicken Fried Rice

Recipe Directions

Heat oil in skillet on medium-high heat. Add chicken; cook and stir five minutes or until cooked through. Add broth and soy sauce. Bring to a boil.

Stir in vegetables and rice; cover. Reduce heat to low; cook five minutes.

Stir before serving. Sprinkle with one green onion, sliced, if desired.

Note: For extra flavor, add 2 tablespoons grated gingerroot to skillet with chicken.
