Here's a wonderful low-fat version of a delicious eclair dessert recipe This recipe has fewer calories and fat, plus calcium -- a definite keeper!

Ingredients:
1 box low-fat honey graham crackers
3 cups skim milk, cold
2 (3.4-ounce) packages vanilla fat-free instant pudding (do not use sugar-free)
1 (8-ounce) package fat-free cream cheese
1 (8-ounce) container fat-free Cool Whip whipped topping, thawed
1/4 cup skim milk
2 tablespoons butter or margarine, softened
2 tablespoons honey
2 ounces unsweetened chocolate, melted
1-1/2 cup sifted powdered sugar
Cooking spray

Directions:
Coat a 13 x 9-inch baking pan with cooking spray. Arrange 7-1/2 graham cracker sheets in bottom of the pan.

Make creamy filling by combining 3 cups milk, pudding mix and cream cheese with a mixer for about 1 minute, until thick. Fold in Cool Whip.

Spread half of filling mixture over the graham crackers, then top with another layer of graham crackers and repeat with filling and graham crackers (ending with a third layer of graham crackers on top).

Recipe makes six servings.

For the chocolate topping, combine 1/4 cup milk, butter, honey and chocolate with a mixer until well blended. Gradually add powdered sugar, beating until blended well.

Spread chocolate topping over graham crackers and cover loosely with foil. Chill for at least 4 hours. Cut into 18 squares.

Serving size: 1 portion (one-sixth of dessert).
