Slightly Smashed Spuds Healthy Recipe
Tip: If you use the water from the potatoes, you retain the water-soluble vitamins and minerals.
Ingredients:
4 medium potatoes, peeled and quartered
1 cup water
1 /2 cup skim milk powder
1 /4 teaspoon salt
Pinch black pepper
1 tablespoon fat free sour cream
Optional: 2 tablespoons chives or green onion, finely chopped, or 1 teaspoon parsley

Directions:
Place potatoes and water in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer for 20 minutes or until fork tender. Remove from heat. Do not drain water.
Add all remaining ingredients. Smash well with potato masher. Add fresh skim milk if too dry.
Recipe makes four 1-cup portions and halves or doubles easily.
