Reduced Fat Cherry Almond Muffins Recipe

Just plain healthy recipe...

Light and tender Reduced Fat Cherry Almond Muffins. Egg whites replace eggs and skim milk reduces fat and calories.

Recipe Ingredients

2-1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup melted butter
4 egg whites
3/4 cup fat free milk
1/2 teaspoon almond extract
1 teaspoon vanilla extract
6 ounces cherries, drained

Recipe Directions

Reduced Fat Cherry Almond Muffins

Combine the flour, sugar, baking powder and salt. In a separate bowl, combine the egg whites, milk and extracts. Whisk the melted butter into the milk mixture. Stir in the flour/sugar mixture. Stir until combined. A few small lumps are to be expected. Do not over mix.

Fold the cherries into the prepared batter. Place batter into your favorite muffin pan. Top with sugar and sliced almonds. Bake at 350 degrees for approximately 20 minutes or until top of muffin is set.
