Tomato Dill Soup Recipe

Just plain healthy recipe...

Hearty tomato dill soup with Tabasco, cayenne and chili powder. This soup gets on the hot side, but you can control to your taste.

Recipe Ingredients

4-1/2 tablespoons butter
1/2 cup flour
3 tablespoons butter
1 cup onion, chopped
1 large clove garlic, minced
3-1/4 cup chicken stock
3 dashes Tabasco sauce
22-oz. can tomato puree
11-oz. can diced tomatoes
1 large clove garlic, minced
2-1/2 tablespoons honey
3/4 teaspoon black pepper
1/4 teaspoon cayenne
1/2 teaspoon chili powder
1 teaspoon basil
1 tablespoon dill

Recipe Directions

Bowl of Tomato Dill Soup

To make roux, melt 4-1/2 tablespoons butter in small heavy saucepan. Stir in flour until well blended. Cook over low heat, stirring often for three to five minutes. Remove from heat and set aside.

Melt 3 tablespoons butter in 3-quart saucepan. Saute diced onions until tender then add minced garlic and saute one to two minutes. Add chicken stock and bring to a boil, then simmer. Whisk in roux. Cook over medium heat until thickened and smooth.

Add Tabasco, honey, tomato products and spices. Simmer 30 to 45 minutes.
