Turkey Meatloaf Recipe
Just plain healthy recipe...
A Turkey Meatloaf with whole wheat bread crumbs and spinach nestled inside. For spinach haters, the best part is, you reap spinach benefits but really cannot taste it.
1 tablespoon oil
1/2 cup low fat milk
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
2 cupssoft whole wheat bread crumbs
1 10-oz. packagefrozen chopped spinach
2-1/2 poundslean ground turkey
Thaw and squeeze dry the frozen spinach.
In a skillet, saute onion in oil until tender; set aside.
In a bowl, combine the eggs, milk, lemon juice, salt, basil, oregano and pepper. Add the bread crumbs, spinach and reserved onion; stir to combine.
Crumble turkey over mixture and mix until well blended.
Shape into a 12 x 5-inch loaf; place in a 13 x 9 x 2-inch baking pan, lined with aluminum foil and lightly sprayed with nonstick cooking spray. Spoon salsa over top.
Bake, uncovered, at 350 degrees for 30 minutes. Drizzle with butter; bake 30 to 35 minutes longer or until a meat thermometer reads 165 degrees.
