Cheese and Pepper Omelet Recipe
Just plain healthy recipe...
Liven up your next omelet with yellow and green bell peppers, onions and Cheddar cheese. This Cheese and Pepper Omelet will keep you going all morning!
1 cup chopped yellow bell pepper
1 cup chopped green bell pepper
1/2 cup chopped onion
4 egg whites
1/4 cup water
1/2 cup shredded reduced fat Cheddar cheese
1/2 cup thick salsa
Spray large non-stick skillet with no-stick cooking spray. Add peppers and onion; cook and stir on medium-high heat five minutes or until tender. Remove from skillet; set aside.
Whisk together eggs and egg whites with 1/4 cup water.
Pour eggs into skillet; cover. Cook six minutes. Top with pepper mixture and cheese. Using spatula, fold egg mixture over filling; cover. Cook three minutes or until cheese is melted. Serve topped with salsa.
