Milk is Highly Perishable
Even with pasteurization, milk is highly perishable. Of course, it needs to be kept as cold as possible without freezing, but even if the milk is kept cold, exposure to light can cause off flavors. It is best to buy milk in opaque containers. Clear containers may cause some initially imperceptible damage under grocery store lights, which means your milk will spoil sooner at home. Let the "use by" date serve as aguide; if properly stored, the milk may be usable up to a week beyond that date. If milk does sour, it won't be pleasant to drink but is fine to use in baked applications.
