Baked Pecan-Coated Chicken
Heat oven to 350-degrees. Coat four chicken cutlets with mixture of 3-tablespoons flour, 1/2 teaspoon salt and 1/2 teaspoon of pepper; then dip into two beaten egg whites. Next, roll chicken in 1-cup finely chopped pecans. Bake on foil-lined baking sheet coated with vegetable oil spray, 12 to 15 minutes or until no longer pink and juices run clear.
Serving Suggestions: Serve with rice and crusty roll. Purchase a blueberry cobbler for dessert.
