Are we Teaching Kids to Over-Eat?
A study in the Journal of the American Dietetic Association suggests we may be teaching our children to overeat. Penn State researchers looked at two groups of kids aged three to five. When the 3-year-olds were offered a bigger-than-usual serving of macaroni and cheese, they ate only as much as they wanted and left the rest- but the older kids at about 72 percent more calories when they were served a larger portion. Study author Barbara Rolls, Ph.D., says this shows that kids have a natural instinct for regulating food intake, but by age five, many learn to ignore hunger signals and respond to other cues (including parents; expectations and our cultural message that more is better). This can lead to weight problems in adulthood -- another reason to stay in touch with your inner child.

Southwestern Baked Potatoes
Scrub, pierce and microwave baking potatoes (8 ounces each) 10 to 12 minutes on high power. Wrap potatoes in paper towels and then in terry towel for five minutes. Meanwhile, heat 2-teaspoons cumin and one clove minced garlic and cook one minute. Add 2-cups mild salsa and one can (15 to 19 ounces) rinsed and drained black beans and cook five minutes or until hot. To serve, split potatoes and divide bean mixture among them. Top with chopped cilantro and plain yogurt. Serve with suggestions: Coleslaw and Multigrain rolls.

Vegetable Cheese
Layer some creamy cheese onto your sandwich and fight cholesterol at the same time! A Finnish study found that eating two ounces of vegetable cheese instead of dairy cheese every day for four weeks cut total cholesterol by 5-percent and unhealthy LDL by 6-percent in people with mild to moderate high cholesterol levels. Vegetable cheese eliminates saturated fat and increases your intake of unsaturated fat. So, it helps cut cholesterol levels two different ways. Replace your sandwich cheese with vegetable slices made from either soy or canola oil. All of these slices have 40 calories, 2 grams of fat and 200mg of calcium per slice.

Food Fixes

Roll leftover steak, black beans, cheese, salsa and sour cream in a tortilla and heat in the microwave for an easy steak burrito.

Use a pizza cutter to cut everything at mealtime: pancakes, french toast, grilled cheese, fish sticks, sandwiches...anything that needs to be in bite size pieces for the little ones! It's much faster and easier than using the knife and fork method.

When cutting an onion, control your tears by starting at the top. The sulfuric compounds that make you cry are concentrated in the root end. When you are using only half an onion, use the top half; the root end will stay fresher longer.

Eliminate fish smells by boiling a pot of water containing a few whole cloves, stick of cinnamon and a slice of lemon on the stove.
